Grappa of Chianti Classico “Cellole”

From the best Sangiovese and Merlot grapes grown in our vineyards “Cellole” you get the Chianti Classico Riserva, which for years has been an expression of quality and tradition, core values of our way of working. The pomace exhausted sangiovese and merlot at the end of fermentation maceration (which lasts about three weeks), are separated from the liquid and sent to the distillery, where very quickly is the process of distillation. The system is completely new, costriuito stainless steel and copper, allows you to work according to the canons of the water bath, the most ancient and traditional system which ensures the best quality of distillation. This allows you to get a brandy with excellent aroma and softness. The processing is completed by an aging period of about 3-4 months in one of our barrels previously used for aging red wine, which gives the brandy a soft amber color.
